STRAWBERRY DAIQUIRI
2 oz Cardinal Spirits Tiki Rum
.75 oz lime juice
1 oz strawberry syrup (recipe below)
1 strawberry slice, for garnish
CHILL a coupe glass by filling it with ice while you prepare the cocktail.
ADD all ingredients except garnish to a shaker, then add ice.
SHAKE well, until the tin frosts.
REMOVE ice from the coupe class.
STRAIN shaker into the chilled coupe class.
GARNISH with a strawberry slice.
For the strawberry syrup: combine 1 cup sugar, 1 cup water, 1 cup finely chopped strawberries, and 1 pinch of sea salt. Heat on low until sugar dissolves, stirring every so often. Transfer strawberries and syrup to a blender; blend until smooth. Using a fine mesh strainer, separate the seeds from the syrup. Store syrup in an airtight container in the refrigerator.
